Cherry Rice Pilaf

1 Tbsp butter or margarine

1 cup chopped onion

1 cup chopped celery

1 cup diced carrots

½ cup dried Michigan cherries

½ cup chopped walnuts or pecans

1 clove garlic, diced

1 tsp dried oregano

½ cup fresh basil leaves, torn into small pieces

3 cups cooked rice

Melt butter in a non-stick skillet.Add onion, celery, and carrots.Sauté until vegetables are tender.Add garlic and sauté another minute.Stir in cherries, nuts, oregano and basil.Stir until heated.Add mixture to cooked rice.

Yield 8 servings.

This recipe would also be delicious with tart dried cranberries.
